Brief Bio
Esther is joining Dr. Perrin’s Lab and will be working on strategies to improve nutritional therapies for preterm infants using donor human milk. She has her Bachelor’s degree and a Master’s in Food Science and Technology from Obafemi Awolowo University and another master’s in Food and Nutritional Sciences from North Carolina A&T State University. Esther’s past research has been centered on Food Nutrition and Food Safety.
At Obafemi Awolowo University, Esther worked in Dr. Ikujenlola’s lab on producing complementary food from locally available raw materials to combat protein energy malnutrition in children. At North Carolina A&T State University she worked in Dr. Yu’s laboratory, her research was focused on food safety where she worked on the control of mold and mycotoxin in organic corn grains using GRAS essential oils.
